Ingredients

Units Scale
  • 4 bone-in pork chops (about 3 pounds)
  • Salt and black pepper, to taste
  • 1/2 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1 tablespoon olive oil
  • 10.5 ounces condensed cream of mushroom soup (1 can)
  • 10.5 ounces condensed cream of chicken soup (1 can)
  • 3/4 cup reduced-sodium beef broth
  • 2 cups sliced mushrooms
  • 1 small onion, sliced

Instructions

  1. Season and Sear: Preheat olive oil over medium-high heat. Season pork chops with salt, pepper, paprika, and garlic powder. Sear each side for about 3 minutes until browned, then remove from the pan.
  2. Prepare Gravy Base: In the same pan, combine the condensed soups and beef broth, whisking to deglaze the pan and release browned bits from the bottom.
  3. Layer in Slow Cooker: Place sliced mushrooms and onions at the bottom of a 6-quart slow cooker. Arrange the pork chops on top and pour the soup mixture over the meat.
  4. Slow Cook: Cook on low for 7–8 hours until the pork becomes tender and falls apart easily. For a thicker gravy, stir in a cornstarch slurry (1 tablespoon cornstarch mixed with 1 tablespoon cold water) during the last 30 minutes.
  5. Serve: Enjoy the dish warm over mashed potatoes, rice, or egg noodles for a hearty, flavorful meal.
