Ingredients

  • 3 medium eggs, beaten
  • 1/2 green cabbage (about 1 pound), sliced thinly
  • 1 medium carrot, julienned or sliced thinly
  • 2 tablespoons onion, diced
  • 2 garlic cloves, minced
  • 1 tablespoon light soy sauce
  • 2 teaspoons dark soy sauce
  • 2 teaspoons oyster sauce
  • 2 teaspoons white granulated sugar
  • 4 tablespoons olive oil, divided
  • Salt to taste

Instructions

  1. Heat 1 tablespoon of olive oil in a skillet over medium heat. Add the beaten eggs and cook, stirring frequently, until scrambled and fully cooked. Transfer to a plate.
  2. In the same skillet, heat another tablespoon of olive oil. Sauté the onion and garlic for about 1 minute until fragrant.
  3. Add 2 more tablespoons of olive oil and stir in the cabbage and carrot. Cover the skillet and cook for 3-4 minutes until slightly tender.
  4. Stir in the light soy sauce, dark soy sauce, oyster sauce, and sugar. Mix thoroughly and cook for another 1-2 minutes. Adjust salt if needed.
  5. Return the scrambled eggs to the skillet, mixing them with the vegetables. Serve hot, optionally over rice or noodles for a complete meal.
