  • 6 large eggs
  • 200g (7 oz) feta cheese, crumbled
  • 1 cup baby spinach, chopped
  • 1/2 cup cherry tomatoes, halved
  • 2 tablespoons olive oil
  • 1/2 teaspoon dried oregano
  • Salt and pepper to taste
  • Fresh basil for garnish (optional)
  • Crusty bread for serving (optional)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Drizzle olive oil in a large oven-safe skillet or baking dish and spread evenly.
  3. Scatter crumbled feta, chopped spinach, and halved cherry tomatoes evenly in the dish.
  4. Crack the eggs over the top, spacing them out evenly.
  5. Sprinkle with salt, pepper, and dried oregano.
  6. Bake for 12-15 minutes, or until the egg whites are set but the yolks remain slightly runny.
  7. Remove from the oven and let cool slightly. Garnish with fresh basil if desired.
  8. Serve immediately with crusty bread for dipping.
