  • 1 medium butternut squash, peeled and cut into chunks
  • 1 white onion, sliced
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 pound pasta (e.g., rigatoni or your favorite shape)
  • 1 cup pasta water, reserved
  • 1 cup vegetable stock
  • 1 teaspoon garlic powder
  • 1 teaspoon oregano
  • Grated Parmesan cheese for serving

Instructions

  1. Prepare the Squash and Onion:
    • Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
    • Toss the butternut squash and white onion with olive oil, salt, and pepper. Spread them evenly on the baking sheet and roast for 20 minutes or until fork-tender.
  2. Cook the Pasta:
    • Cook the pasta according to package instructions until al dente.
    • Reserve 1 cup of pasta water before draining. Set the cooked pasta aside.
  3. Make the Sauce:
    • Transfer the roasted squash and onion to a blender or food processor.
    • Add the reserved pasta water, vegetable stock, garlic powder, and oregano. Blend until smooth and creamy.
  4. Combine and Serve:
    • Toss the cooked pasta with the butternut squash sauce until well-coated.
    • Top with grated Parmesan cheese and serve.
