4 boneless, skinless chicken thighs

1 tablespoon vegetable oil

1 onion, finely diced

3 garlic cloves, minced

1 tablespoon tomato paste

2 teaspoons white miso paste

1 tablespoon soy sauce

1 tablespoon sugar

1 cup chicken stock

1/2 cup cream (heavy or thickened)

1 cup cherry tomatoes, halved

Fresh basil or parsley, for garnish

Salt and pepper, to taste
Instructions

Heat the vegetable oil in a large skillet over medium-high heat.

Season chicken thighs with salt and pepper, then sear for 3–4 minutes on each side until golden. Remove and set aside.

In the same pan, sauté onion until soft (about 3 minutes), then add garlic and cook for another 30 seconds.

Stir in tomato paste, miso paste, soy sauce, and sugar. Cook for 1 minute to allow the flavors to blend.

Pour in the chicken stock and stir to combine. Return the chicken to the pan.

Cover and simmer for 10–12 minutes until chicken is cooked through.

Stir in cream and cherry tomatoes, cooking uncovered for an additional 5 minutes until the sauce is slightly thickened and tomatoes are soft.
