  • Olive Oil: 1 tablespoon
  • Unsalted Butter: 1 tablespoon
  • Garlic: 2 cloves, minced
  • Sun-Dried Tomatoes: 1/2 cup, chopped
  • Heavy Cream: 1/2 cup
  • Chicken Broth: 1/2 cup
  • Parmesan Cheese: 1/4 cup, grated
  • Fresh Basil: 1 tablespoon, chopped
  • Italian Seasoning: 1 teaspoon
  • Salt and Pepper: to taste
  • Fettuccine or Pasta of Choice: 8 oz (225g)
  • Fresh Parsley: 2 tablespoons, chopped (for garnish)

Instructions

  1. Prepare Pasta: Cook pasta according to package instructions. Drain and set aside.
  2. Cook Lobster: Heat olive oil and butter in a large skillet over medium heat. Add lobster chunks and cook for 2–3 minutes, until just cooked through. Remove from skillet and set aside.
  3. Sauté Aromatics: In the same skillet, add garlic and sun-dried tomatoes. Sauté for 1–2 minutes until fragrant.
  4. Make the Sauce: Pour in heavy cream and chicken broth, stirring to combine. Let simmer for 3–5 minutes until the sauce thickens slightly.
  5. Add Cheese and Seasoning: Stir in Parmesan cheese and Italian seasoning. Season with salt and pepper to taste.
  6. Combine Ingredients: Return the cooked lobster to the skillet and toss in the sauce. Add the cooked pasta and mix until well coated.
  7. Garnish and Serve: Sprinkle fresh basil and parsley over the dish. Serve warm.
