  • 1 pound uncooked shrimp (31-40/pound size), thawed & peeled (tails optional)
  • 8 ounces uncooked fettuccine
  • 2 tablespoons unsalted butter
  • 4 ounces cream cheese (softened and cut into smaller pieces)
  • 3/4 cup heavy/whipping cream
  • 1/4 cup chicken broth
  • 2 large garlic cloves, minced
  • 1 cup freshly grated parmesan cheese
  • Salt & pepper to taste

Instructions

  1. Prepare the shrimp: If frozen, thaw the shrimp under cool running water. Peel and remove tails if desired.
  2. Cook the pasta: Boil a large pot of salted water and cook the fettuccine until al dente, following package instructions.
  3. Make the sauce: In a skillet over medium heat, combine butter, cream cheese, heavy cream, chicken broth, and minced garlic. Stir continuously as the butter melts and the cream cheese blends into the sauce (about 2-3 minutes).
  4. Thicken the sauce: Let the sauce bubble gently for about 5 minutes, stirring occasionally. Then, add grated parmesan and cook for another minute until fully incorporated.
  5. Cook the shrimp: Add shrimp to the pan and cook for 5-6 minutes, stirring occasionally, until they turn pink and are fully cooked.
  6. Season and serve: Season with salt and pepper to taste. Toss the cooked fettuccine with the sauce and shrimp until fully coated. Serve immediately.
