- 1 pound uncooked shrimp (31-40/pound size), thawed & peeled (tails optional)
- 8 ounces uncooked fettuccine
- 2 tablespoons unsalted butter
- 4 ounces cream cheese (softened and cut into smaller pieces)
- 3/4 cup heavy/whipping cream
- 1/4 cup chicken broth
- 2 large garlic cloves, minced
- 1 cup freshly grated parmesan cheese
- Salt & pepper to taste
Instructions
- Prepare the shrimp: If frozen, thaw the shrimp under cool running water. Peel and remove tails if desired.
- Cook the pasta: Boil a large pot of salted water and cook the fettuccine until al dente, following package instructions.
- Make the sauce: In a skillet over medium heat, combine butter, cream cheese, heavy cream, chicken broth, and minced garlic. Stir continuously as the butter melts and the cream cheese blends into the sauce (about 2-3 minutes).
- Thicken the sauce: Let the sauce bubble gently for about 5 minutes, stirring occasionally. Then, add grated parmesan and cook for another minute until fully incorporated.
- Cook the shrimp: Add shrimp to the pan and cook for 5-6 minutes, stirring occasionally, until they turn pink and are fully cooked.
