- 4 lobster tails, peeled and deveined
- 200g pasta (linguine or spaghetti recommended)
- 3 tablespoons unsalted butter
- 5 cloves garlic, minced
- 1/2 teaspoon red pepper flakes
- 1/2 cup dry white wine
- 1/2 cup chicken broth
- 1/4 cup freshly chopped parsley
- Salt and pepper to taste
- 1 tablespoon olive oil
- Juice of half a lemon
Instructions
- Cook the pasta according to package instructions. Drain and set aside, reserving 1/2 cup of pasta water.
- Heat olive oil in a large skillet over medium-high heat. Add the lobster tails and cook for 3-4 minutes on each side until golden and just cooked through. Remove and set aside.
- In the same skillet, melt butter and add garlic and red pepper flakes. Sauté for 1-2 minutes until fragrant.
- Pour in white wine and chicken broth, scraping up any browned bits from the pan. Let the sauce simmer for 3-4 minutes, or until reduced slightly.
- Add the cooked pasta to the skillet, tossing to coat in the sauce. If the pasta seems dry, add reserved pasta water gradually.
- Chop the lobster tails into bite-sized pieces and add them to the pasta. Toss gently to combine.
- Squeeze lemon juice over the dish and garnish with fresh parsley. Serve immediately.
