Ingredients

  • 4 lobster tails, peeled and deveined
  • 200g pasta (linguine or spaghetti recommended)
  • 3 tablespoons unsalted butter
  • 5 cloves garlic, minced
  • 1/2 teaspoon red pepper flakes
  • 1/2 cup dry white wine
  • 1/2 cup chicken broth
  • 1/4 cup freshly chopped parsley
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • Juice of half a lemon

Instructions

  1. Cook the pasta according to package instructions. Drain and set aside, reserving 1/2 cup of pasta water.
  2. Heat olive oil in a large skillet over medium-high heat. Add the lobster tails and cook for 3-4 minutes on each side until golden and just cooked through. Remove and set aside.
  3. In the same skillet, melt butter and add garlic and red pepper flakes. Sauté for 1-2 minutes until fragrant.
  4. Pour in white wine and chicken broth, scraping up any browned bits from the pan. Let the sauce simmer for 3-4 minutes, or until reduced slightly.
  5. Add the cooked pasta to the skillet, tossing to coat in the sauce. If the pasta seems dry, add reserved pasta water gradually.
  6. Chop the lobster tails into bite-sized pieces and add them to the pasta. Toss gently to combine.
  7. Squeeze lemon juice over the dish and garnish with fresh parsley. Serve immediately.
