For the Potatoes:
- 1 1/2 lbs. potatoes (Yukon Gold, russet, or red)
- 1 1/2 tbsp. olive oil
- 1/2 tsp. salt
- 1/3 tsp. pepper
- 1/2 tbsp. taco seasoning (or your favorite seasoning blend)
- 1/2 tbsp. oregano
For the Green Beans:
- 1 lb. green beans (bright green, without blemishes)
- 1/2 tbsp. olive oil
- 4 garlic cloves, minced
- 1/4 tsp. salt
Instructions
- Preheat your oven to 400°F (200°C).
- Peel the potatoes and cut them into medium-sized cubes. In a large mixing bowl, combine the potatoes with olive oil, taco seasoning, oregano, salt, and pepper. Mix well to coat.
- Spread the seasoned potato cubes evenly on a large baking sheet, ensuring they don’t overlap. Bake for 15 minutes.
- Meanwhile, add the green beans to the same mixing bowl (no need to wash it). Add olive oil, minced garlic, and salt. Mix everything together.
- Remove the baking sheet with the potatoes from the oven, add the green beans, and gently mix them together on the sheet.
- Return the baking sheet to the oven and bake for an additional 20-30 minutes, or until the potatoes are tender and the green beans are slightly crisp. Serve hot.
