Walking Tacos offer a portable and fun twist on classic tacos. Packed with seasoned beef, beans, and customizable toppings, they are served directly in a bag of chips, making them perfect for busy nights, outdoor adventures, or casual gatherings. With minimal cleanup and endless topping options, these tacos are a hit with both kids and adults.


Ingredients

  • For the Base:
    • 1 pound ground beef
    • 1 envelope reduced-sodium chili seasoning mix
    • 1/4 teaspoon pepper
    • 1 can (10 ounces) diced tomatoes with green chiles
    • 1 can (15 ounces) Ranch-style beans (pinto beans in seasoned tomato sauce)
  • For Serving:
    • 5 packages (1 ounce each) corn chips (like Fritos or tortilla chip bags)
    • Shredded cheddar cheese
    • Sour cream
    • Sliced green onions

Instructions

  1. Prepare the Beef Mixture:
    • Heat a large skillet over medium heat. Add the ground beef and cook until no longer pink, breaking it into crumbles (about 6–8 minutes). Drain any excess fat.
  2. Add Seasoning and Simmer:
    • Stir in the chili seasoning mix, pepper, diced tomatoes with green chiles, and beans. Bring the mixture to a boil, then reduce the heat to low and simmer uncovered until the mixture thickens, about 20–25 minutes. Stir occasionally.
  3. Assemble the Walking Tacos:
    • Open individual bags of corn chips. Spoon the beef mixture into each bag, then top with shredded cheddar, a dollop of sour cream, and sliced green onions. Serve warm.
